Why?!?

Why am I doing this?



I like to cook and everyone that knows this fat kid, knows I like to eat! Also I have been obsessed with the movie Julie & Julia lately. Starz keeps showing it over and over. I can't help but watch it. Now I don't want to be a male Julie Powell nor could I ever hold a flame to the beloved Julia Child. I just want to share some food I love with the world.

Why am I doing this at 2:00 AM?



I am an insomniac. I have been one since I was a small child.



About Me



I am 33, single, and bored. I am semi disabled and home a lot. I love to entertain and cook for my roommate and close friends. I started cooking when I was seven years old. My Grandmother taught me to help me "catch a wife when you get older." Bless my Grandmother's soul...Cooking hasn't caught "the one" yet, but I keep hoping. My social life with the ladies might creep in here on occasion so beware. I do enjoy cooking for my female friends and am secretly delighted when they tell me I cook better than them. If my legs weren't failing me, due to issues unrelated to being a fat kid, I would most certainly go back to school to become a professional chef.

I have a small garden this summer and I am over ran by cucumbers...I am begging neighbors and friends to take them as my roommate and I will never eat them all. Here is a simple, refreshing, and delicious way to serve them of the summer and all year round.

What you need:


• A glass container of some type. I tend to use Mason canning jars.


• Cucumbers - English, seedless, pickling...whatever!


• 1/2 cup of white sugar


• 1 cup white vinegar


• 1 small onion - I like red onions or Vidalia, but you can use whatever you like.


Slice your cucumbers up...if I am serving to company I sometimes do fancy cuts. Slice your onion into rings. Pack them in your container in alternating layers. Mix your vinegar and sugar together BEFORE you put it in with the cucumbers, making sure all the sugar is dissolved. Chill in the fridge for at least four hours before severing. I usually do this first thing in the morning and let it sit all day before serving. Also when the cucumbers and onion starts running low...I just slice more and add to the "brine". Congratulations! You just made pickles! They keep for weeks at a time in the fridge and I think it is so delicious.



These will also come in handy for a concoction I will be sharing at a later date!
